let me eat cake

Can’t get on that scale now.

With all the zucchini of giants given to us lately, sure, I could have made some healthy, vegetable dish, but I had to make a chocolate zucchini cake, with pecans and chocolate chips, sprinkled with powdered sugar. I even discovered a whole website about it: chocolateandzucchini.com. Next, I’ll look for hotfudgeinasmalltincup.com.

Yes, everyone loves cake, but I forgot how good this is. Granted, it’s still early on the cake curve, but I just want to sit down with the pan and a fork. Well, maybe no fork, honestly, and lick every corner clean like Becca with her snout in the yogurt container. Or, her giraffe-like tongue jabbing for the marrow in the middle of the bone. Slurp, slurp.

Almost as bad behavior I may be guilty of: leaving a knife in the pan for ease of cutting. Anytime. No extra steps to the knife drawer needed (Reminds me of King of Queens when fat, lazy husband gets “the EZ Reacher” as a gift and wife says, “oh, thanks, lifting was his only cardio”).

Emptying the dishwasher? Maybe just a smidge. Washing that pan again? Just a lil’ sumthin’.

Yum.

By the end, I’ll be that guy getting offered just one wafer-thin mint…..

  • Oh, I am SO glad I’m not the only one who leaves the knife with the cake for ease of cutting (and slicing on the sly!)

    But zucchini and chocolate? I don’t know if I could stomach that combo.

  • It may SOUND weird, but it is OH so good! The zuc’s just add moisture, not taste. And you can feel good about yourself getting some veggies, right??

  • Veggies and chocolate in one fell swoop….hmmm…this could be a new diet fad.

    I like zucchini. I like chocolate, I’m just having a hard time imagining them together.
